Guilt Free Thomas Bagel Thins Chicken Ranch Pizza Recipe
Like I said previously, I love pizza! In fact, it is probably a significant factor in why I look a lot fluffier in the mirror than I did years ago. Fluffy is great for cute animals like cats, dogs and hamsters! But not so attractive or fantastic for us humans! The extra fluff around the middle is very unhealthy to be hanging on to year after year and difficult to get off after 40! With that being said, I still want the occasional heavenly slice of gooey goodness! My opinion is, if I can’t enjoy the foods I love than I am not really living. Sound dramatic? Perhaps it does, but it is the truth! So, I need to get creative and make smarter choices by changing the fatty version into something a tad waistline friendlier!
One of my favorite types of pizza is Chicken Ranch. On the average, one slice of Chicken Ranch pizza is 330 calories (234 of fat), which is equivalent to consuming three normal slices of pizza. YIKES! Imagine if you have two slices! I came up with my own Chicken Ranch recipe using Thomas 100% Whole Wheat Bagel Thins, fat free ranch dressing, fat free cheese, and lots of veggies to fill me up. The Thomas Bagel Thins Chicken Ranch pizza tastes amazing and sinful, but is lower in calories and fat (compared to regular Chicken Ranch pizza) and basically guilt free! Thomas Bagel Thins Guilt Free Chicken Ranch Pizza Recipe
Ingredients
- Recipe makes 4 small personal pizzas. Don’t eat them all! Share them with a friend!
- 2 Thomas 100% Whole Wheat Bagel Thins split into 4
- 6 oz chicken breast
- 8 tbsp Fat Free Ranch Dressing
- 2 cups sliced mushrooms
- Half of a small red onion sliced
- 1 roasted red pepper packed in water sliced
- 1 clove of garlic minced
- 1 tbsp olive oil healthy serving of fat
- 1 cup shredded fat free cheddar cheese
- ¼ cup crumbled fat free Feta cheese
- 4 fresh leaves of basil chopped
- Dash of Salt and pepper
Instructions
- Preheat oven to 375 degrees
- In small pan add olive oil and sauté mushrooms, onion, and garlic until soft. Add salt and pepper.
- Spread 2 tbsp of fat free ranch dressing on each half of Thomas 100% Whole Wheat Bagel Thins.
- Top each with an equal amount of chicken breast, sautéed vegetables, red pepper, cheese, and basil.
- Bake on an ungreased sheet for 15 minutes or until cheese is melted.
