As we’re now coming into the hottest months of the year and long school holidays for the kids, lets take a look at some of the delicious foods of Mexico for you to try with your friends and family. These are perfect for those summer backyard gatherings and lazy, relaxed family Sundays. Grab a bite of the country’s most popular dishes guaranteed to be mouth-wateringly edible.
1.Guacamole
Guacamole is one of the most popular of Mexico’s dishes and actually dates back to the Aztecs. It’s an easy one to make, consisting of mashed avocados, tomatoes, lemon juice, onions, chili peppers and garlic. It is usually offered as a dip for tortilla chips, but can also be added to other dishes, like burritos to help cool down the heat of chillies.
2.Tacos al pastor
Dating back to the 1920s and the arrival of Lebanese and Syrian immigrants to Mexico, tacos al pastor is one of Mexico’s favorite version of taco. Meaning ‘shepherd style’ it consists of thin pork strips folded into a corn tortilla served with onions, pineapple pieces and coriander leaves. Or you can opt for a more traditional taco with chicken or beef, guacamole, sour cream and salsa.
3. Tostadas
This is a great way to use up leftover corn tortillas that have gone a bit stale. Simply fry them in boiling oil until they become crisp, crunchy and golden. They can be then be served alone (a bit like oversized tortilla chips) or pile them up with lettuce, refried beans, cheese, cooked meats or seafood for a quick and tasty snack.
4. Chiles en nogada
This dish features the green, white and red colors of the Mexican flag making it an eye-catching addition to your table. Traditionally, green poblano chillies are filled with an aromatic mixture of chicken , fruits (like apples and cranberries) and spices. Accompanying these are a white walnut-based sauce and red pomegranate seeds. This could easily be prepared in advance, ready to add a dash of color to any last minute summer spreads.
5. Elote
This is an extremely popular Mexican snack which can be found at many street vendors. It’s basically a spicier version of corn on the cob. The corn is boiled and either served on a stick (like an ice-cream) or the corn kernels are cut off the cob and served in cups. The corn is then covered in lavish amounts of salt, chili powder, lime, butter, sour cream and cheese You can vary the ingredients to taste, or simply have them on the table allowing your guests to pick and choose.

i wish i’d eat more on my tacos than just the sauce 🙁 i feel like i’m missing out, but i don’t like the taste of my vegetables raw unless they’re in a juice :/ weird i know. my co worker is from LA and she absolutely love Elotes !!!! i didn’t even know they had street corn until she told me.
